Known as a typical product of the Lucanian (namely Basilicata region) cuisine, the crusco red pepper, that is crunchy, gives to the “Strascinati” pasta the unique and unmistakable flavor of the tradition and culture of this wonderful and ancient Mediterranean land. Bright red, sweet and with a very thin skin, once cooked with Extra Virgin Olive Oil for a few seconds they become crunchy, that is “cruschi”.

To make Strascinati pasta

  • 400 g durum wheat flour
  • 200 ml of warm water
  • Salt to taste


  • 100 g of soft inside of stale bread
  • 8 dried peppers
  • 1 garlic clove
  • 1 spicy pepper
  • 6 spoons of Extra Virgin Olive Oil


  1. Knead all the ingredients for the dough on a pastry board until obtaining a firm and homogeneous dough and let it rest for a few minutes
  2. At this point get back the dough and, spread it out using your hands and form sticks of approximately half a centimeter in diameter and 4 centimeters in length
  3. Using the index, the middle and the ring finger, “drag them” by pressing well in order to obtain the typical internal cavity, perfect for collecting our seasoning
  4. Now remove the stem and seeds from the peppers, cut them vertically into two parts and brown them in a pan with 6 tablespoons of Extra Virgin Olive Oil for no more than 3 seconds; the risk is to burn them, so take care not to exceed the indicated time
  5. Place the peppers on top of the paper towel
  6. In the meantime, bring boil salted water
  7. In the same pan in which we cooked the peppers, brown the garlic clove and the spicy pepper; add the soft inside of stale bread making not too small breadcrumb and mix until gilding
  8. Now that we have finished the preparation, add the pasta in the pot and wait for it to come to the surface; drain it and pour it into the pan together with the cruschi peppers and the browned soft inside of stale bread
  9. When mixing, flavors and aromas come together and invite us to serve our tasty and satisfying dish! Enjoy your meal!
