Bread cooked with broccoli rabe and sausage is a traditional dish from Basilicata, rooted in a peasant culinary tradition. Nothing was wasted, and stale bread paired with wholesome and flavorful ingredients like broccoli rabe and sausage created a dish that remains highly appreciated to this day. Ingredients
– 800 g broccoli rabe
– 8 Cancellara sausages
– 8 slices of stale bread
– 1 garlic clove
– 6 tablespoons EVO oil (extra virgin olive oil)
– Salt to taste
Preparation
- Discard the stems of the broccoli rabe, using only the leaves and flowers. Wash them in cold water and boil them in salted water for about 20 minutes.
- Meanwhile, heat the EVO oil (extra virgin olive oil) in a pan and sauté the garlic along with the crumbled sausage.
- After 20 minutes, remove the broccoli rabe, leaving the cooking water in the pot. Use this water to soak the halved slices of bread, allowing them to soften in about a minute.
- Remove the bread, drain it, and sauté it in the pan with the sausage and broccoli rabe for a few minutes over medium-high heat.
- Serve on a plate, enjoy, and… Bon appétit!
